Heute habe ich mal wieder ein neues Brötchenrezept kreiert. Hierbei benutze ich ein Mehl, das bis vor einigen Wochen noch neu für mich war &#8211; das Ruchmehl. Ruchmehl ist ein ein Mehl, dem ein Teil des Weissmehls entzogen wurde und welches entsprechend einen höhen Anteil der äußeren Schalenschicht beinhaltet. Es enthält dadurch mehr Eiweiss, Mineralstoffe und Vitamine aus der Randschicht des Korns. Für diejenigen, die kein Ruchmehl zur Verfügung haben: Es ist vergleichbar mit einem Weizenmehl Typ 1050.</p></div>

<ol style="list-style-position: outside; padding-left: 1.1em;">
<li>Backofen auf <strong>210°C O-/U-Hitze</strong> vorheizen.</li>
<li>75 g Roggenkörner in den Mixtopf geben und<strong> 30 Sek. / Stufe 10</strong> mahlen und umfüllen.</li>
<li>75 g Wasser, 15 g frische Hefe und Klecks Agavensirup in den Mixtopf geben und <strong>1,5  Min. / 37°C / Stufe 2 </strong>auflösen.</li>
<li>Alle weiteren Zutaten und die gemahlenen Roggenkörner zugeben und <strong>3 Min. / Teigknetstufe</strong> zu einem Teig verarbeiten.</li>
<li>Teig in eine Schüssel (z.B. die Nixe) geben und <strong>20 Min.</strong> abgedeckt an einem warmen Ort gehen lassen.</li>
<li>Teig auf eine etwas bemehlte Teigunterlage geben, bemehlen, mehrfach falten und zu einer Rolle formen.</li>

Herausgekommen ist ein leckeres Dinkel-Roggenmischbrot ohne Weizenmehl. Ich habe außerdem Kürbiskerne und Leinsamen hinein gegeben. Das Brot kommt mit wenig Hefe aus, den weiteren Auftrieb gibt mein frischer Sauerteig. Als Backform habe ich dieses Mal den Zauberkasten ausgewählt. Du kannst das Brot aber auch super im Airfyer zubereiten. Im Rezept gebe ich dir auch dafür die Angaben dafür. Ich nutze den <a href="https://amzn.to/4r4lnjt">Corosi 5 l</a> und einen <a href="https://amzn.to/4sQWlpV">gusseisernen Topf mit einem Durchmesser von 16 cm</a>, bei dem ich den Griff abmontiert habe.
